Loaded Labneh & Veggie Wrap

Ingredients

  • Wrap or bread of choice; paratha or pita work well
  • 1 tbsp Yaza Labneh any variety
  • 1 tbsp olive oil
  • 1 zucchini
  • 1 eggplant
  • 2 slices of tomato
  • 2 slices halloumi or other soft cheese
  • Salt and pepper to taste

Directions

Step 1

  • Slice zucchini and eggplant lengthwise into ½ inch strips

Step 2

  • Pour olive oil into pan and cook zucchini and eggplant over medium-high heat until slightly softened

Step 3

  • Spread labneh evenly on wrap or bread

Step 4

  • Add cooked vegetables and cheese, plus salt and pepper to taste

Step 5

  • Enjoy!
