YAZA LABNEH?

“WE ARE FOOD PURISTS.”
In the Mediterranean, the real, fresh labneh is found near the farms where the milk is produced. The milk is fermented and strained through a bag resembling cheesecloth to remove the whey. The result is labneh. With the help of our creamery partner – located in the heart of the Catskill Mountains – we are able to replicate the authentic method. The milk comes from local dairy farmers in Upstate New York, within about 50 miles of the creamery. Because we make our labneh the way it is made back home, our labneh doesn’t need all of those chemicals and preservatives.

HOW IS YAZA DIFFERENT FROM OTHER DIPS?
At Yaza, we are committed to using only clean ingredients. In fact, our Plain labneh contains just two: pasteurized cultured milk & salt. Labneh is meant to be good for you. The cultures in our labneh contain natural probiotics, which can improve digestive health, boost your immune systems, and even boost mental health.
Other commercial labnehs tend to use shortcuts instead of the traditional method to produce their products. They’re also only generally available plain. We wanted to take advantage of labneh’s versatility by offering it prepared with other traditional Mediterranean flavors like za’atar and chili spices.
WHAT ARE THE NUTRITIONAL BENEFITS OF LABNEH?
In addition to the health benefits of probiotics, our clean, preservative-free labneh is a great source of protein, calcium, and vitamin B12 – all with no added sugars.
WHAT FLAVORS DOES YAZA LABNEH COME IN?
Besides our Plain labneh, we offer two flavor options. Za’atar & Olive Oil captures the most authentic way of eating labneh. We know that many people prefer their dips to have a little kick, so we also offer a Spicy Chili version of our labneh, too.
We plan to continue innovating new flavors and forms of labneh, so we can offer our customers a more diversified labneh experience.

Below you’ll find a recipe for my Homemade Za’atar Pita Chips + Labneh Dip. This recipe uses Yaza’s Plain Labneh, but incorporates the flavor profiles of the other dips too!
Pita Chip Ingredients:
4 round pita breads (wheat, white, or mix)
1/3 cup EVOO
4 tbsp zaatar
1 tsp salt
Scallion Chili Oil (modified from @nytcooking)
1/4 cup olive oil
6 scallions
1/4 tsp chili flakes
Directions:
Preheat oven to 350 degrees. Grease two sheet pans with olive oil and set aside. Cut the pita bread into triangular slices, and split apart. Place onto greased sheet pans. In a small bowl, combine olive oil, za’atar, and salt. Using a pastry brush, coat each piece of pita with the oil/za’atar/salt. Bake for 8-10 minutes until brown.
While the pita chips are baking, slice the scallions, including the white stems. In a small pan over medium heat, place the olive oil, scallions, and chili flakes. Stir frequently until the scallions begin to brown. Immediately remove from heat and cool.
Top the labneh with the scallions and chili oil, and serve with the cooled pita chips.”
